Creme caramel, also known as flan or caramel custard, is a delectable and classic dessert with origins tracing back to Europe. It is a smooth and luscious dessert that consists of a rich custard base topped with a layer of golden caramel sauce.

To prepare creme caramel, a velvety custard mixture is made from eggs, milk, sugar, and vanilla extract. The custard is then poured over a layer of caramelized sugar in individual ramekins or a larger baking dish. The dish is then baked in a water bath until the custard sets to a creamy consistency.

Once fully chilled, the dessert is inverted onto a serving plate, allowing the caramel sauce to cascade over the smooth custard. The resulting presentation is a stunning golden-brown dessert with a silky texture and a delightful balance of sweetness.

Creme caramel is enjoyed worldwide and can be found on the menus of many restaurants and bakeries. Its timeless appeal lies in its simple yet sophisticated flavors, making it a perfect ending to any meal or a delightful treat on its own. Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C) to prepare for baking the creme caramels later.

Step 2: Make the Caramel

  • In a medium saucepan, combine the granulated sugar and water over medium heat.
  • Stir gently until the sugar dissolves, then stop stirring and let it boil.
  • Continue boiling until the mixture turns a golden amber color, swirling the pan occasionally for even caramelization.
  • Once the caramel reaches the desired color, immediately remove it from heat to prevent burning.
  • Working quickly, pour an even layer of caramel into the bottom of each ramekin, tilting them to coat the entire base. Be careful as the caramel is extremely hot. Set the ramekins aside to cool and harden.

Step 3: Prepare the Custard

  • In a mixing bowl, crack the eggs and whisk them until well beaten.
  • Gradually add the sweetened condensed milk, whole milk, vanilla extract, and a pinch of salt to the beaten eggs.
  • Continue whisking until all the ingredients are thoroughly combined.

Step 4: Strain the Custard

  • Pour the custard mixture through a sieve into a separate bowl. This step helps to remove any lumps and ensures a smoother texture for your creme caramel.

Step 5: Fill the Ramekins

  • Carefully pour the strained custard mixture into each ramekin, on top of the hardened caramel. Leave some space at the top, as the custard will expand slightly while baking.

Step 6: Create a Water Bath

  • Place the filled ramekins into a large roasting pan or baking dish.
  • Carefully pour hot water into the pan, around the ramekins, until it reaches about halfway up their sides. This water bath helps the custard cook gently and evenly.

Step 7: Bake the Creme Caramel

  • Carefully transfer the water bath with the ramekins into the preheated oven.
  • Bake for about 45-50 minutes or until the custard is set. You can check if it’s done by gently jiggling one of the ramekins; it should have a slight wobble in the center.
  • Once done, remove the pan from the oven and let the creme caramels cool in the water bath for a few minutes.

Step 8: Chill and Unmold

  • Take the ramekins out of the water bath and let them cool to room temperature.
  • Cover each ramekin with plastic wrap and refrigerate them for at least 4 hours or preferably overnight to fully set the custard.

Step 9: Unmold and Serve

  • To unmold, run a small knife around the edges of each ramekin to loosen the creme caramel.
  • Place a dessert plate upside down on top of the ramekin and quickly flip it over, gently tapping the bottom if needed to release the creme caramel onto the plate.
  • The caramel sauce will drizzle over the custard, creating a beautiful presentation.
  • Serve and enjoy your delicious homemade creme caramel!

Remember, making creme caramel might take a little practice, but the rich and creamy result is well worth the effort. Enjoy this classic dessert with friends and family!
