- 1 cup cashews (kaju)
- 1/2 cup pistachios (pista)
- 1 cup powdered sugar
- 1/2 teaspoon cardamom powder
- A few strands of saffron (optional)
- 1 tablespoon ghee (clarified butter)
- Edible silver foil (varak) for decoration (optional)
Step By Step Instructions Of Singori Recipe:
Step 1: Preparing the Cashew and Pistachio Paste
- Take cashews and pistachios separately and grind them separately to make fine powder. Ensure that the powders are smooth without any lumps.
- Alternatively, you can soak the cashews and pistachios in water for 1 hour and then grind them to a smooth paste.
Step 2: Cooking the Cashew Paste
- Heat a non-stick pan and add the cashew paste to it.
- Cook the cashew paste on low heat, stirring continuously to avoid burning.
- After a few minutes, the paste will start thickening.
- Add powdered sugar and continue stirring until the mixture starts leaving the sides of the pan.
- Add cardamom powder and mix well.
- Remove the mixture from heat and let it cool.
Step 3: Preparing the Pista Paste
- Heat another non-stick pan and add ghee to it.
- Add the pistachio paste and cook it on low heat, stirring continuously.
- Cook the pistachio paste until it thickens and starts leaving the sides of the pan.
- Remove from heat and let it cool.
Step 4: Assembling the Kaju Pista Roll
- Take a clean, flat surface and spread a sheet of parchment paper on it.
- Grease the parchment paper with ghee.
- Divide the cooled cashew mixture into two equal parts.
- Take one part and spread it on the greased parchment paper to form a rectangular shape of about 1/4 inch thickness.
- Similarly, divide the cooled pistachio mixture into two equal parts.
- Take one part of the pistachio mixture and spread it evenly over the cashew layer, leaving a small margin on the edges.
- Carefully roll the layered mixture, using the parchment paper to assist you.
- Repeat the same process with the remaining cashew and pistachio mixtures to make another roll.
- Wrap the rolls tightly in the parchment paper and refrigerate for about 1-2 hours until they become firm.
Step 5: Garnishing and Serving
- Take out the rolls from the refrigerator and remove the parchment paper.
- Slice the rolls into 1/2-inch thick pieces.
- Optional: If desired, garnish each slice with a small piece of edible silver foil (varak).
- Your delicious Kaju Pista Rolls are ready to be served!
- You can store them in an airtight container in the refrigerator for up to 2 weeks.
