  • 1 ½ cups powdered jaggery
  • ½ cup water
  • ¼ teaspoon cardamom powder
  • Oil or ghee for frying

Step 1: Preparing the Rice Flour

  1. Wash the raw rice thoroughly and soak it in water for about 2-3 hours.
  2. Drain the water and spread the soaked rice on a clean cloth or paper towel.
  3. Let the rice dry completely for a few hours or overnight.
  4. Once the rice is dry, grind it in a mixer or blender until it becomes a fine powder.
  5. Sieve the ground rice flour to remove any coarse particles. Keep the flour aside.

Step 2: Preparing the Jaggery Syrup

  1. In a saucepan, add powdered jaggery and water.
  2. Heat the mixture on medium heat and stir until the jaggery completely dissolves.
  3. Strain the jaggery syrup to remove any impurities and transfer it back to the saucepan.
  4. Place the saucepan on the stove and cook the syrup on medium heat until it reaches a sticky consistency.
  5. To test the consistency, take a small amount of syrup and drop it into a bowl of water. It should form a soft ball.
  6. Once the syrup reaches the desired consistency, remove it from heat and let it cool for a few minutes.

Step 3: Mixing the Dough

  1. In a large mixing bowl, add the rice flour and cardamom powder.
  2. Slowly pour the warm jaggery syrup into the rice flour while continuously mixing.
  3. Use a spoon or your hands to combine the flour and syrup until it forms a smooth, pliable dough.
  4. If the dough feels dry, you can add a little water or milk to bring it together.

Step 4: Shaping and Frying the Adhirasam

  1. Take a small portion of the dough and roll it into a smooth ball.
  2. Flatten the ball between your palms to form a disc-shaped Adhirasam.
  3. Make a small hole in the center of the disc using your finger or a straw. This helps in even cooking.
  4. Heat oil or ghee in a deep frying pan or kadai on medium heat.
  5. Carefully slide the shaped Adhirasam into the hot oil and fry it until it turns golden brown on both sides.
  6. Use a slotted spoon to remove the fried Adhirasam from the oil and drain the excess oil on a paper towel.
  7. Repeat the process with the remaining dough, shaping and frying Adhirasams in batches.
  8. Allow the Adhirasam to cool completely before storing them in an airtight container.
