- 1 teaspoon chana dal (split chickpeas)
- 2-3 dried red chilies
- A sprig of curry leaves
- 1/4 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil (preferably coconut oil)
- 1/2 teaspoon cumin seeds (optional)
- A pinch of asafoetida (hing) (optional)

Step 1: Prep Work (Time: 10 minutes)
- Finely chop the cabbage and set it aside.

- Add oil to the heated pan and let it heat up.
- Add mustard seeds and let them splutter.

- Check the seasoning and adjust salt if needed.
- Garnish the cabbage thoran with chopped cilantro.
- Remove from heat and transfer to a serving dish.
