Ghevar is a traditional Rajasthani sweet dish that is popularly enjoyed during festive occasions in India. It is made from a batter of all-purpose flour (maida), ghee (clarified butter), and milk. The batter is deep-fried in vegetable oil, resulting in a unique, lacy, and crispy texture. Ghevar is then soaked in a sugar syrup flavored with cardamom and saffron, adding a delightful aroma and taste to the dessert.

The preparation of Ghewar requires skill and precision, as the batter needs to be poured in a circular motion to create the characteristic shape of a net-like disc. The frying process requires careful monitoring to achieve a golden brown color and maintain the delicate structure. Once the Ghewar is fried, it is left to cool before being soaked in the sugar syrup.

Ghevar is often garnished with chopped almonds and pistachios, adding a touch of crunch and enhancing its visual appeal. It is served in slices or wedges and can be enjoyed on its own or accompanied by a dollop of rabri (sweetened condensed milk).

Step 1: Prepare the batter:

  • In a mixing bowl, combine the all-purpose flour and ghee. Mix well until the mixture resembles breadcrumbs.
  • Gradually add milk to the mixture while stirring continuously to form a smooth batter. The batter should be of pouring consistency.
  • Add a few ice cubes to the batter and mix well. This helps in getting the desired texture of the Ghevar.

Step 2: Fry the Ghevar:

  • Heat vegetable oil in a deep frying pan or a kadhai. The kadhai should have a wide mouth and a narrow bottom.
  • Once the oil is hot, pour a ladleful of the batter into the center of the kadhai in a circular motion. The batter will spread and form a net-like pattern. This is the characteristic shape of Ghewar.
  • Fry the Ghewar on medium heat until it turns golden brown and crispy. Make sure to fry it carefully to maintain its shape.
  • Remove the fried Ghewar from the kadhai and drain the excess oil by placing it on a wire rack or absorbent paper. Allow it to cool completely.

Step 3: Prepare the sugar syrup:

  • In a saucepan, combine sugar and water. Bring it to a boil and stir until the sugar dissolves completely.
  • Add saffron strands and cardamom powder to the sugar syrup. Simmer for a few minutes until the syrup thickens slightly.
  • Remove the sugar syrup from heat and let it cool to room temperature.

Step 4: Soak the Ghevar:

  • Once the Ghewar has cooled down, carefully place it in a large plate or tray.
  • Pour the prepared sugar syrup over the Ghewar, ensuring that it is evenly soaked. Allow the Ghewar to absorb the syrup for about 15-20 minutes.

Step 5: Garnish and serve:

  • Sprinkle chopped almonds and pistachios over the soaked Ghewar for added flavor and decoration.
  • Cut the Ghevar into desired shapes, such as squares or wedges.
  • Your delicious Ghewar is now ready to be served. It can be enjoyed as it is or served with a scoop of rabri (sweetened condensed milk).

Ghevar is a delightful dessert with a unique texture and flavor. The crispy, honeycomb-like structure soaked in sweet syrup makes it a favorite among dessert lovers. Enjoy this traditional Rajasthani delicacy with your family and friends during festive celebrations or as a special treat!
