Sutarfeni Recipe | Just In 6 Easy Steps.

Sutarfeni is a delectable Indian sweet that originated in the state of Uttar Pradesh. Also known as Sutarpheni or Surtarfeni, it is a popular dessert enjoyed during festivals, weddings, and other special occasions.

Sutarfeni is made from fine vermicelli noodles that are delicately woven into thin, crispy layers. The noodles are typically prepared from wheat or refined flour, and they are lightly fried in ghee (clarified butter) to achieve a golden, crunchy texture. The fried noodles are then sweetened with a sugar syrup infused with fragrant cardamom and garnished with a variety of nuts, such as almonds, pistachios, and cashews. The addition of saffron strands enhances the aroma and gives it a distinct yellow hue.

The preparation of Sutarfeni requires great skill and precision, as the noodles must be woven carefully to create thin, lacy layers. The end result is a delightful, flaky sweet with a perfect balance of textures and flavors. It offers a wonderful combination of crispiness from the noodles, the richness of ghee, and the sweetness of the sugar syrup.

Sutarfeni is often served as a standalone dessert or as a topping over creamy desserts like rabri (sweetened condensed milk) or kulfi (Indian ice cream). Its intricate presentation and unique taste make it a delightful treat that is cherished by sweet lovers across India. In this step-by-step guide, I’ll explain how to make Sutarfeni:

Step 1: Prepare the dough

  1. Take a mixing bowl and add all-purpose flour, ghee, and a pinch of salt.
  2. Mix the ingredients well with your hands until they resemble bread crumbs.
  3. Gradually add water in small amounts and knead the mixture to form a smooth and pliable dough.
  4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

Step 2: Prepare the sugar syrup

  1. In a saucepan, add sugar and water. Heat the mixture over medium heat, stirring continuously until the sugar dissolves completely.
  2. Add saffron strands (if using) and cardamom powder to the sugar syrup.
  3. Simmer the syrup for 5-7 minutes until it thickens slightly. Remove it from heat and keep it aside.

Step 3: Roll and prepare the strands

  1. Divide the dough into small lemon-sized balls.
  2. Take one dough ball and roll it into a thin circle using a rolling pin.
  3. Apply a little ghee or oil on the rolled dough circle to prevent it from sticking.
  4. Fold the rolled dough in half and then in half again to form a triangle shape.
  5. Using a sharp knife, slice the folded dough into very thin strands. Repeat this process with the remaining dough balls.

Step 4: Fry the strands

  1. Heat ghee or oil in a deep frying pan or kadai over medium heat.
  2. Once the ghee is hot, carefully drop a small portion of the dough strands into the pan.
  3. Fry the strands until they turn golden brown and crispy. Make sure not to overcrowd the pan; fry them in batches.
  4. Once fried, remove the strands using a slotted spoon and drain excess oil on a paper towel.

Step 5: Soak the fried strands in sugar syrup

  1. While the sugar syrup is still warm, gently drop the fried strands into the syrup.
  2. Let the strands soak in the syrup for about 5 minutes, ensuring they are well coated.
  3. Using a fork or tongs, gently toss the strands in the syrup to separate them and prevent them from sticking together.

Step 6: Serve and garnish

  1. Transfer the soaked strands to a serving dish or individual plates.
  2. Garnish with chopped nuts like almonds, pistachios, or cashews for added flavor and presentation.

Your delicious Sutarfeni is now ready to be served! You can enjoy it warm or at room temperature. It can be stored in an airtight container for a few days.

Note: The cooking time and the quantity of the ingredients may vary depending on your preference and the desired yield. Adjust the sweetness of the sugar syrup to suit your taste.
